Made a Homity Pie and a Coffee Walnut Cake for the ‘mid-weekend’ between my parent’s birthday.
Homity Pie originated from the recipe books of the women working for the Land Army in World War II when rationing hit England and they were looking for a dish to make that was hearty and nourishing for the outdoor workers. It is essentially potatoes and leeks in a creamy-cheesy gloop enclosed in a pastry case with breadcrumbs and more cheese sprinkled on top (as we can be generous now with the cheese, thank goodness). It is vegetarian and once you have made it past the chopping and potato boiling, not too bad to make for your supper.
